Coffee French Toast Parfait


Recently, I partnered with Eat Your Coffee for a tasty breakfast recipe, and I have to say this one takes the cake. This french toast coffee parfait is perfect to help you wake up in the morning. It's also easy to make. Please keep in mind this recipe contains caffeine and sugar. In fact, each Eat Your Coffee bar contains an entire cup of coffee in case you are feeling a little sluggish in the morning. I would not suggest eating this recipe if you are also enjoying a cup of coffee.


This is also a grab-and-go recipe. Feel free to make it in a mason jar or container to take with you to work or morning classes.



Parfait Ingredients:

1 Eat Your Coffee bar - Salted Caramel Macchiato

Vanilla Yogurt

Your favorite granola

Texas Wildflower Honey - Regular honey is fine as well

Strawberries


French Toast Ingredients:

Wheat bread - 2 slices

1 C Non fat milk

1-2 Eggs

1.5 Tsp Vietnamese Cinnamon

1 Tbsp of butter


Step one - Time to make your french toast. Melt the butter and combine with wet ingredients, eggs, and cinnamon. Slice the bread into thin strips and lightly soak in the mixture. Note: Don't let the bread soak for too long as it will get soggy and won't maintain it's shape. Place bread on a skillet on medium heat. Once cooked through set to the side to cool off. You want the slices to be cool before placing on the yogurt. If not, they will melt through.


Step two - Begin to layer your parfait to your liking. I found it was best to cut the Eat Your Coffee bar into cubes and place between the yogurt layers. The yogurt will add some moisture and desired sweetness to the bar, and will give it that creamy latte taste.


Step three - Slice strawberries and place in the parfait to add a refreshing and light sweetness. This will break up the coffee flavor pattern. Once cooled cut the french toast slices into cubes and also layer in the parfait. Together these ingredients are the perfect sweet mix for breakfast.
